Compositional Characteristics of honey from Brong Ahafo region of Ghana

Abstract

The purpose of this work was to determine the proximate and chemical composition of samples of honey collected from four locations; Wenchi, Techiman; Kintampo, and Jema in Brong Ahafo region of Ghana. The four honey samples were analysed using various laboratory methods to determine the proximate composition, total sugars, acidity and viscosity. The moisture levels ranged from 16.2 to 19.4%, total ash from 0.28 to 0.50%, total sugars, 59.59 to 71.06%, acidity varied from 21.7 to 63.7 meg/kg and viscosity from 710 to 1130 cst. Honey production is a very vibrant business in the areas mentioned in this article but producers have little or no idea about the nutritional value of honey in the diet.
