Assessment of Knowledge and Practices of Food Hygiene and Safety of Caterers in Senior High Schools in Ghana: A Case Study of Two Senior High Schools in Koforidua

Abstract

Food handlers have a major role in ensuring safe food in both the commercial and welfare sectors of the catering industry, and that is to guarantee that meals served in institutional catering are hygienic for student’s consumption. The study assessed the knowledge and practice of food safety and hygiene among catering staff of two different Senior High Schools (SHS) in Koforidua in the Eastern Region of Ghana. A total of forty (40) caterers were selected from two (2) SHS using purposive sampling technique. The study was descriptive and the main instruments used were questionnaires.
